Emergency Food Product Packaging by Pectin-Based Antimicrobial Coatings Functionalized by Pomegranate Peel Extracts

Emergency food products (EFPs) or energy bars are used in critical situations, such as natural disasters, to promote crisis management. EFPs require sophisticated packaging strategies. Edible coatings incorporated with antimicrobial agents could be considered active materials for increasing EFP safety. In this study, pectin-based pomegranate peel extracts were protect bars. Initially, total phenolic contents and antioxidant properties of aqueous ethanolic (PPEs) determined. Also, PPEs analyzed by HPLC. the next step, into matrix edible substances. The sensory microbial contamination coated investigated during 30 days storage. Sixteen substances detected gallic acid, ellagic caffeic coumaric quercetin major ingredients. extract exhibited higher concentrations all compounds. results indicated that showed inhibitory effects on S. aureus E. coli at 50 mg/ml, extract's observed 80 respectively. antibacterial attributed high content a combination different Microbial tests performed able control reduce population microorganisms storage without adversely affecting properties.
